Nu-trains recipe of the month: Cucumber Dill Salmon Cakes

MAKES 6 PATTIES: Sauce 2/3 cup diced cucumber 2/3 cup Total Greek 0% yogurt ¼ tsp dried dill weed 2 cloves crushed garlic Salmon 1 can drained salmon 1 can chickpeas, drained 1 cup Quaker unprocessed bran ½ chopped fresh parsley 2T lime juice 1 tsp hot sauce ¼ tsp. paprika ½ tsp ground cumin ¼ tsp salt 1T veg. Oil Directions:
  • Make sauce in bowl
  • Remove bones and skin from salmon. Mash chickpeas w/ fork. Stir in salmon and unprocessed bran.
  • Then combine the parsley, lime juice, hot sauce, cumin and salt in the mix.
  • Shape the patties
  • Heat 1 ½ tsp oil in the nonstick skillet on medium to high heat. Add the 6 patties and heat for 4 minutes on each side.
  • Repeat with the remaining patties
