Winter vegetables may present a challenge in the kitchen. Faced with long cooking times and little time to cook them, you tend to walk right passed them when strolling the grocery aisles. Winter root vegetables also seem to get a bad rep with their seemingly high starch and sugar content, but that is just not the case. When trying to stay healthy but cook a simple seasonal meal that is still fulfilling and nutritious, winter root vegetables should be a must on your grocery list.
