Root for your diet!

Winter vegetables may present a challenge in the kitchen. Faced with long cooking times and little time to cook them, you tend to walk right past them when strolling the grocery aisles. Winter root vegetables also seem to get a bad rep with their seemingly high starch and sugar content, but that is just not the case. When trying to stay healthy but cook a simple seasonal meal that is still fulfilling and nutritious, winter root vegetables should be a must on your grocery list. Root vegetables seem to be tricky, but truthfully they are nearly impossible to mess up. Martha Rose Schulman’s Winter Root Vegetables recipe is both delicious and simple. You can always switch up the polenta for quinoa, farro or any other whole grain for even more nutritional benefit. As an added bonus, this recipe is gluten free!
