Lundberg Family Farms Santa Fe Barbecue Rice Chips

Baked Chicken Tenders with Rice Chip Crumble Crust

Serves 6


  • 3 boneless, skinless chicken breasts, cut crosswise into 2 inch strips
  • 2 egg whites, lightly beaten
  • ½ cup brown rice flour
  • sea salt and freshly ground black pepper
  • 2 packages of Lundberg Santa Fe BBQ Rice Chips


Heat oven to 350. Set a wire rack over a rimmed cookie sheet and set aside.

Season the chicken pieces with salt and pepper, then dredge first through the rice flour, then through the egg whites, and finally in the crushed rice chips. Set on the wire rack with space around each piece. Bake for 15 minutes until coating is crisp and chicken is cooked through.
